1. Filter wine after any fining agents have been used and have fully settled out of the wine.

2. For best results, wine should be filtered after 2 - 3 months of age and after being stored in a cold location. After this time, wine can be filtered starting with the #2 polish filter pad followed by the #3 sterile filter pad after. Wait 2 - 4 days between filtrations.

3. When filtering young wine less than 30 days old, begin filtering with the #1 coarse filter pad, followed by the #2 polish filter pad and then the #3 sterile filter pad (if desired). Wait 2 - 4 days between filtrations.

Directions for use in beer:

- Use 1/2 teaspoon per 5 US gallons.
- For optimal activity add to wash or wort once cooled to 131-140°F (55-60°C). Stir to dissolve thoroughly. Pitch yeast once temperature is below 86°F (30°C) and leave to ferment.
- Enzyme is stable up to 149°F(65°C).

Directions for use in baking:

- Add 20 to 100 ppm (based on weight to flour content) to flour when mixing ingredients. Adjust as needed.
