The EC-1118 yeast is an excellent choice for sparkling wines and has good flocculation creating a very compact sediment. It is ideal for restarting stuck fermentations, is suitable for barrel fermentations and ferments well at cooler temperatures.

It produces excellent red and white wines but is particularly suited for blush and semi-sweet wines. This yeast develops complex aromas of tropical fruits from the production of esters and higher alcohols. It also softens the acidity of high acid wines by partially metabolizing malic acid.

It is particularly suited for expressing the freshness of white grapes, late harvest fruit and ice wines. This yeast creates aromas of fresh fruit that are retained even with long periods of cellaring. At fermentation temperatures below 60°F (15°C), it produces more floral qualities making this yeast ideal for grape varieties with a neutral character. K1-V1116 yeast ferments quickly and is resistant to difficult fermentation conditions including low turbidity, low temperature and low fatty acid content. This resilient yeast is also good for restarting stuck fermentations and has a strong alcohol tolerance.

  • The Premier Cuvee yeast is a versatile strain that is recommended for all red and white wines. It is especially suited to making sparkling wines and ciders. It is one of the fastest fermenting yeasts and produces a clean, neutral flavor that allows the other wine flavors to emerge. The Premier Cuvee yeast is a also good choice for restarting stuck fermentations. It has a good tolerance to ethanol and free sulfur dioxide and will typically ferment to total dryness. It is noted for being a very low producer of foam, urea, and fusel oils and is a strain of Saccharomyces bayanus of French origin. Non-GMO.

  • The Lalvin QA23 wine yeast is an excellent choice for Chardonnay, Sauvignon Blanc, Semillon, Chardonel and Gewurztraminer. It has low nutrient and oxygen requirements, and can ferment juice at low temperatures (59°F) to dryness. An excellent thiol converter making it a complementary yeast for developing the passion fruit character found in Sauvignon Blanc. It also produces large amounts of the enzyme beta-glucosidase during the growth cycle. This can create more aromatic wines by allowing for the release of bound terpenes.

This yeast blend has the capacity of releasing a significant quantity of polyphenol-reactive polysaccharides into the fermenting must during the growth phase. The quantity and quality of the polysaccharides released during fermentation improves mouthfeel and color stability. This yeast delivers dependable fermentation kinetics under difficult fermentation conditions. In white wines, BM 4×4 releases a high level of esters to create fruity aromas. It also brings roundness to the mouthfeel and facilitates malolactic fermentation.
